I have ACT 2011, considering upgrading to V16 (in spite of all the negative reviews). If I try the demo out, will it copy over my current database?

No, I don't think it would touch your current db. All the same, always do the appropriate backups.
I have upgraded a few clients to v16 and have not experienced any problems. Works great.

Your post info is not totally clear but it sounds like you want to try out act v16.
If you install v16 on same pc as act2011, you may as well just go with v16.
I am fairly certain, you cannot have both versions of act! installed on same pc/user.? I could be wrong?
If you open your 2011 database with v16 installed, it will update/upgrade your 2011 database to v16 database.
Not sure if you are using Pro or Prem for Web version but both v16 are fine and much better than 2011.
When Swiftpage releases Service Pak1, v16 will be even more solid.
Be sure to check the system requirements, use at least a 2.2 gig processor with 4+ gig of ram especially if you plan to interface with Office/Outlook. Check control panel / programs features and insure you have microsoft .net framework 4.5.1...stuff.
And as Mark indicated, take Backups of your act databases and Personal files daily and b4 making major changes.
