Thanks for your help. I found a solution.
It turns out that in order to update the Surname and First Name field in Act!, you need to use the contact field.
First, ensure there is a first name and last name in the contact field. As you can see in the following image, I have "McTesterson, John" in the contact field.
Then, you need to click the ellipsis next to the contact field box. This opens the "Contact Name" dialog (see second image). Ensure the first name and surnames are properly selected. Click OK.
Then, you need to SAVE the contact. DUH! However, I didn't know that I needed to manually save any changes I made.
Automatically, the information from the Contact field is parsed into the First Name and Surname fields, and you should see the changes immediately.
