I am having issues setting up a new tab to track service calls!  We would like this to be like a notes or opportunities tab where you can just ADD a new service call each time one comes up.  Any suggestions on the best way to do this???

You will need to use an addon if you want to create additional tabs like the notes, history or opportunities.
