We tend to create notes, emails etc and then when these form an opportunity we have to return to the original corresspondence and share them with the opportunity.
This is a real drag as it means choosing each record and adding them individually, two or three clicks each. Is there any way of adding multiple records to an opportunity, person etc?

That would be a great feature to ask for. To the best of my knowledge there is no way to do that out of the box. There may be an addon product or possibly one of the Act Consultants can offer a solution, but I think you are limited changing or adding the association after the fact. You can add requested features here.
