Can I use an opportunity report and add the contact's email and name? I don't see where I can switch from opportunity records to contact records. I only get the opportunity records when I add a field. Is there a way to do this?

Unfortunately you can't combine entities (opportunities and contacts) in a single section of the ACT report.. However, the report, Opportunities by contact, lists information grouped by contact and then information by opportunities. You could customize the contact secion of this report.
If you need more substantial customization, consider a 3rd party reporting tool like Crystal Reports.
