I have been trying to figure out how to add a column for state (and city if possible) in the list view for opportunities. However when I try to customize columns, I can't get into any of the contact fields to add them. Surely someone else has tried to do this before!
What I am wanting to do is to be able to look at a list and export the columns into excel so that I can show how my opportunities are doing by state. My opportunities are not traditional sales opportunities, but are customized for the non-profit and are program related.
Any help out there?

The oppertunity list view will only show oppertunity table fields. You would need an addon to do what you want.

Unfortunately, you can't add State and similar fields into the Opportunity List. But, using an addon, like Durkin's Impact Suite (http://www.durkincomputing.com/) you can do that and much, much more. Well worth the investment.
