I have used Act for a very long time!! The OPPORTUNITIES process has never made sense. Using ActPro on Win10.
When a Prospect I contact and turn them into a possible sale. I start a process. That in and of itself is a NEW OPPORTUNITY. It is always a NEW OPPORTUNITY. When I bring up the Contact View I have the option to pick "Add/remove Opportunity" or "New Opportunity".
Additionally, I can go to the OPPORTUNITY tab and the DETAIL view has a Field OPPORTUNITY / NAME
But there is NO dropdown option to choose different types of OPPORTUNITIES. What is that FIELD for.

On the Opportunity Detail view, you should see a "process" dropdown. That's where you could choose the type of opportunity. Those have to be set up in Tools>Define Fields.
