We are using Act2010 on Windows XP and Windows 7 machines. I have been able to do a limit to list for drop-down menus by unchecking the "Allow users to edit items in this list" box in the "Manage drop-down lists" section, but I cannot find this option for Opportunity Process and Stages. Is there a way to remove the "Edit List Values" option from the Opportunity Process and Stages drop-down lists?

Unfortunately, there is no way to edit these fields to remove the Edit List values option. The only way to keep users from changing these values is to set the users security roles to Standard. The option will still be there, but when they click it, they will receive a prompt telling them that they do not have proper permissions to change them. I was also frustrated, so I created a new field that did allow the users to select or add to the list.
BTW, I've also added:
Next Step
Next Step Date
Deal Drivers
Opportunity Strength (Memo)
Opportunity Weakness (Memo)
Threat Strength (Memo)
Threat Weakness (Memo)
Then each opportunity affects the customer in one of these Yes/No fields:
Cost Savings
Cost Avoidance
Rick Mitigation
End User Experience
Profitability
