I assume you are using Microsoft Outlook as your eMail client.
The easiest way is to put the addresses in the BCC field instead of the to field. Put your eMail address in the TO field.
I have been using eMailConnect from crm-service.com. This makes mail merge a snap when integrating into Outlook. In the last day I have sent out three mass eMails of 500 each. When they are sent, they are sent as individual eMails (even if there is an attachment) and you can choose what to keep as a history. I keep the title only and not a copy.
