one of the users entered a new contact. That contact ended up a user. Not in the "manage users" field, just in the List View under Record Creator. When I looked under "manage users", that user didnt exist (which I knew). I know what users I specified and that contact name wasnt one of them. Does anyone know how this occurs?

Yes. The users My record was edited to have the new contacts information.

Just go to Lookup, My Record and correct the details there. Lookup, Advanced, Users will show you the MY records of all users.
Every User has a my Record. The info here is used for populating sender info on templates plus reports and contact views.
