I believe you are referring to the Task List that is the right hand column in the Daily calendar view. I've just looked at a copy of an Act! 2005 Premium database and see the phone number is displayed in that task list. It will only display the phone number that is in the 'Phone' field, it won't display other phone fields.
If you are seeing something different, please respond with the version of Act! you are running (Help > About Act!).
Another option is to use the main Task List screen. On that screen you can add/remove columns to display the information you need. On the Task List > select View menu > Customize Columns.
