I have updated our V18 server to the following 18.104.22.168 but when i log on remotely using the IP/APFW/Default.aspx that screen shows Version 18.0.490.0. Can i update this so its the same as 22.214.171.124?

If you've updated the version of Act! on the server, this automatically updates the web version also.
After logging in, try clicking on About Act! Premium and check the version number there.
In certain cases, the login screen version number doesn't get updated correctly. I believe this was fixed in later versions of Act!
