What version of ACT! are you using? And just to verify, you went to Tools/Preferences, clicked Scheduling Preferences under the Calendar & Scheduling tab, and selected the option "Create separate activities when scheduling with multiple contacts". Also, make sure that your calendar filters and your task filters are not hiding these activities.
