You can't turn that off - however, in ACT 2011 you can filter exactly what history types you want to show, so if you're on this version you can simply go to the "Types" dropdown filter on the History tab, expand "System Changes" then "Contact Changes" and uncheck "Contact Deleted".
Otherwise what you can do is, from time to time go to your record and sort by the Result field and click the first "Contact Deleted" in the list and Shift + Click the last one and delete them all at once. If you needed to do this for several users at once you could create a group of those user's My Records and then do the same thing from the History tab for that group.

I'm using 2010 - I assume the filter you suggested won't work till I upgrade?
As for the second suggestion, I've found that one can only delete a batch of about 100 at a time. Trying to do more results in a fatal stop with a red "X" across the whole History screen and a message that paramters have been exceeded. It's tedious for me because I can add and delete up to1,000 records in a week.

Yeah, the really granular history filter is a new 2011 feature.
Deleting multiple records at once can cause some issues, but 100 sounds really low to me. You might try a reindex via ACTDiag.exe (or see the KB here) and see if that helps.
If you need to do this on a regular basis, my fellow Canadian Gilles Cavin at Exponenciel has a tool that allows you to delete notes & history with very specific criteria for $60:

To clarify, I don't have a problem deleting as many records at a time as I need.
The problem is that the deletions are then automatically recorded in the History field of "My Record"; it's from there I can only delete about 100 lines at a time.
I'll try out the recomended add-on before purchasing to see if that helps.
I doubt the efficacy of using the reindex of ACTdiag.exe in my case.
As a routine, I use the reiindex facility under "Tools - Database Maintenance" daily immediately before running Backup..

That tool is actually for deleting specific types of notes and history - so every so often (or after each major purge of contacts) you could run it and tell it just to delete the "Contact Deleted" history from your record.
