I have Sage ACT! Premium 2012 and am looking to purchase Office 365, I haven't found any articles pertaining to this and wonder if after I connect Outlook 2010 to Office 365 will ACT! still be able to function as it should in its entirety?

Office 365 is an on-line hosted product and ACT! can't talk to it directly ....you need to have a local Office for ACT! to talk to.
Here are some instructions on connecting Office 2010 to 365:
If you connect Office 2010 to Office 365, I believe ACT! will just look at Office 2010 the same way ... although I haven't tested this, myself.
If you get Office 2013, then you'd need to upgrade ACT! to 2013, which is expected to get a patch for O2013 in another couple of weeks.

We now have a product that will help ACT! work with MS Office 2013!
If you have office 365, you just need to make sure that you download and install a local copy of it, and everything should work fine now.
