IN ACT Premium 2013, I am in the opporutnity list view. The fields Dates and Status dont seem to modify the existing lookup.
Is the only way to modify and existing lookup to go back thru the advanced lookup dialogue?
Whatever I search for, I generally only want to see STATUS=OPEN opportunities.

Act! Premium 2013 does modify the lookup, here at Windows 7, latest updates, when changing the dates. Also when changing the Status. I see the changes almost instantly. Version 18.104.22.168. Version will be visible with <Help><About>
If you want to be sure, you can choose <View><Refresh>, or <F5> after modifying dates or changes.

From your Opportunities module - Use the Lookup / Advanced Query feature,
You can save your query and even apply it to your custom commands toolbar if you plan to run the query often.
