The answer for this would vary depending on the version of ACT you have. Newer versions (At least version 13) would keep this history in the opportunities view. Older versions would keep this history with the contact.
This would be accomplished via keyword search from the Lookup Menu
You would need to do a keysearch against either the Opportunities or Contact entity
although you can't search the result, the result is in the history. Enter this information.
Click Find Now
Once the results are there, choose create Lookup.
It's important that you choose either Contacts or Opportunities from the "type" dialog box if you don't, you won't be able to create a lookup
