The order I have customised under my Contacts tab within Companies is continuously reverting back to default and including fields I do not require. Does anyone know if there is a solution for this?

Unfortunately, these are not "sticky" and usualy revert back upon reboot of the computer. It would be a "feature request" to have Sage fix this, The problem has been around a long time. Hopefully they will get to it soon.
Only the list views (contact, task, company, group, opportunity) are sticky when modified.
