Creating parent/children in dropdowns?

Is it possible to create dropdowns the generalized parent selection options, with more specific children below it that also get selected when the parent is selected?

 

For example, if you wanted a product category of "Apples", with additional selections before it for "Red Delicious", "Granny Smith", etc. where when a user selects "Apples" in a lookup, it also picks up records where only the more specific child is selected?

Do you know, in the example they give on the link you provided, if you would be permitted to select just the region and no specific salesmen?

With the release of Impact Suite v7.1 we added cascading drop downs to the top level entities; contacts, companies, groups and opportunities. In previous versions cascading drop downs were only available on custom tables.
