Under OPPORTUNITIES > our company wants to see the column "state" - as some of our Sales Reps have multiple States/Territories for which they are responsible.
They export to excel their data to place in their Slaes reports, but at this stage we can't find a way to include the column "STATE" as its not available from the list of customizable columns.
How can we rectify this without doing it manually in excel EVERY SINGLE TIME they export the data.

You can't. State isn't a field in the opportunity table. You coud add a custom field to the opportunity table and manually enter the state. There might be a third party addon that would copy the state field from the contact table into your custom field in the opportunity table.
