After upgrading to SP1, I am not able to add, delete, or edit products to a closed opportunity. Was this supposed to be part of the update or is this a bug?
We will often enter an opportunity and close it in the same day. If we have not already entered the products before checking the closed-won button, then there is no way to go back and edit the products for the opportunity. Even going back and changing it to open, does not allow you to make changes to the products. This is very frustrating for us.

Welcome to the ACT! Online Community. Based on the information provided, your issue appears to be associated with a previously reported issue with the ACT! 2010 SP1 update. You mentioned that even if you change the status back to "Open" that you cannot edit the products under the opportunity. This should actually work, you just need to make sure you save the Opportunity after changing the status. An update will be provided when there is additional information regarding this issue. I apologize for any inconvenience this may have caused.
