Can the SDK be sued to modify the Products table to a more complex calculation or to add security to a custom subentity attached to the opp? I'd like to know if this is even possible before finding a developer to address the issues.

No, the SDK isn't capable of modifying the act tables other than adding columns and the security would have to come from outside of the api as well. This would be better handled by a custom entitiy, possibly a sub of the product table.
